Can a shoe cobbler make my current running shoes 0 drop?

I have read stories about some runners taking their running and dress shoes to a shoe cobbler to make them 0 Drop. When I brought my shoes to the shoe cobblers in my city, they said they could not do that. It would mess up the shoe. One even told me that my shoes would have a hole in them within a week. I know I have seen pictures of people doing this to nike frees, so why could they not do that to my shoes?

They didn't say they wouldn't do it, they said what would happen if they did.

I run 3 miles a day and I currently have to take off time running for fear of a stress fracture in my knee. I also experience shin splints. I believe better shoes would really help me. Any suggestions? I anticipate about an 100.00 investment, no more than 150.00

I am a runner, I go to many races and I know what exactly you need. "Addidas" is defiantly the best brand. And whatever the brand is, the shoes must be completely flat, bendable.
